- Vinification
Hand sorting of grapes before destemming. Pre-fermentive
maceration for 6 days at 6ºC. Alcoholic fermentation in
stainless steel tanks for 17 days at 28ºC to 30°C. Post
ferment maceration for 12 to 14 days. Run off and
malolactic fermentation.
Ageing
45% aged in French oak barrels for 8 months;
55% in stainless steel tanks.
Food Pairing
Superb with red meats, this wine works perfect with
gourmet barbecue burgers, juicy steaks or a tender
rack of ribs. It is also pairs well with lasagne or
shepherd’s pie.
